Nutella Pinwheel Cookies

I guess I may be on a little bit of a Nutella kick, but fortunately that’s not a real life problem that I have to worry about.  After making the Mini Nutella Hand Pies, I still had quite a bit of Nutella left, and in the interest of me not eating it via Nutella Fingers (see: sticking fingers into jar, scooping Nutella, eating), I decided to make some delicious (and really cute!) Nutella Pinwheel Cookies.

You will need:

1 stick of unsalted butter

1/2 cup sugar

1 egg yolk

1 tsp vanilla extract

1 heaping cup all-purpose flour

1/4 cup Nutella to spread

Pre-heat your oven to 350.  Mix together butter and sugar until creamy.  Mix in egg yolk and vanilla untill light and fully combined.  Stir in flour, then refrigerate for 15 minutes; this will make the dough easier to work with.

Roll the dough out into a rectangle, about 1/4 inch thick.  Spread the Nutella in the center, leaving a border around it about 1 finger thick (this will help make sure the Nutella doesn’t ooze out.)  Carefully roll the dough.  Refrigerate for another 10 minutes, then cut the slices.  I originally started cutting my slices with a knife, but quickly realized that this made the Nutella smear, so I switched my cutting method.  The best way to slice these would be with a thin, firm wire, but I’ll be real with you– all I had in my house was guitar strings, so that’s what I used!

Lay the slices on a lined baking sheet, and bake for 12-15 minutes until slightly golden at the edges (time will vary by how thick you cut your slices.)  You’ve got an easy and pretty little Nutella Pinwheel Cookie to enjoy!

    These cookies are absolutely adorable! Guitar string huh…idk if my husband would let me steal them off of his guitar…..do you think the dough is soft enough to use floss or kitchen string?
